Also, with summer finally here, we’re all focused on eating less, wearing less and having way, way more fun! This salad is high carb but low cal, super crunchy, super satisfying, and will give you the stamina you’re looking for to watch all 13 episodes back-to-back, if you really want to 😉
It’s no question that House of Cards is a phenomenal show, and we’re all going to be obsessing over it throughout June, but why a House of CARBS salad? Well, when you look at Robin Wright’s body, you know she’s not eating sugary cereals, meaty sandwiches, processed pastries or pastas on the regular! Girl is watching what she eats! She looks much younger than she is (51), with radiant glowing skin, long, slender arms and legs, and a tight abdomen that proves she’s taking good care of herself every day. And we all know, the best way to fight the aging process is by eating raw!
While we can’t forget that, yes, Kevin Spacey is just an all around incredible actor, we women are unanimously in awe of the ethereal Wright as she captures our attention in the show for more than just her mesmerizing portrayal of the beautiful, yet sociopathic, Claire.
And just like Claire’s personality is subdued while also being layered with surprises, so is this House of Carbs salad!
House of Cards Salad
1.5 cups Spring Mix
1/2 cucumber (sliced lengthwise)
1 vine-ripened tomato (chopped)
1/2 avocado (diced)
1/2 zucchini (spiralized)
1/4 C RAW pumpkin seeds
1 small handful RAW sunflower seeds
2 large pinches of ground chia powder
1 tbsp sunflower oil (dressing)
Again, this House of Cards-inspired salad is low cal, but densely nutritious!
Cucumbers have only 1.9 grams of carbohydrates per 1/2 cup and are also chalk full of essential B vitamins. Zucchinis are also very low in net carbs, making them an awesome option for swapping out traditional noodles and making zoodles instead! Zoodles are not only low in carbs, but also have the added benefit of vitamins C & A and nutrients potassium and manganese.
Tomatoes have about 3.5 grams of carbs and 1.1 grams of fibre, and that 1/2 avocado has 1 gram of carbs, plus 5 grams of fibre, about 20 different vitamins and minerals and 120 calories of heart healthy fat!
We’re also adding more good fats into the mix with the raw sunflower seeds (vitamin E, copper, B vitamins) and pumpkin seeds (magnesium and manganese, protein and zinc), as well as the ground chia powder (omega 3 fatty acids, protein, fibre, antioxidants and calcium).
And there you have it! A crisp and crunchy, mean and green, SUPER nutritious House of CARBS salad to honour our favourite foxy lady in her 50’s, the fabulous Robin Wright, and the return of House of Cards’ 5th season to Netflix!
